Snails with mushrooms

  • Fillet of grape snails 600 gr.
  • shiitake mushrooms  600 gr.
  • Bulb onion 500 gr.
  • butter 200 gr.
  • garlic 2 cloves
  • parsley
  • white dry wine 100 ml.
  • rosemary 1 bay
  • salt, black pepper

Snails can be perfectly combined with mushrooms in order to create delicate and nice taste of a new dish. In order to prepare this dish, champignons or forest mushrooms are preferable; however, our recipe uses shiitake mushrooms. Taking into account that they are rather watery, they must be thoroughly dried after washing.

 

 In order to prepare snails with shiitake mushrooms, you will need the following:

  • Fillet of grape snails 600 gr.snails-with-mushrooms
  • shiitake mushrooms  600 gr.
  • Bulb onion 500 gr.
  • butter 200 gr.
  • garlic 2 cloves
  • parsley
  • white dry wine 100 ml.
  • rosemary 1 bay
  • salt, black pepper.

 

In case, live snails are used, rinse them carefully, place into cold water and boil.  Then water should be changed. Then, put the snails on fire, and drain after boiling. Add some water, in order to cover three quarters of mollusks, add herbs and prepare on a low heat for one hour. Then, let it cool, remove the fillet from the shell and separate the edible leg.

snails-with-mushroomsIn a frying pan, melt half the butter and fry chopped onions until it become clear and transparent. Then add mollusk fillet to the onions, insert garlic and parsley, fry everything for 10-15 minutes, then put in salt and pepper. Add the white wine and leave on fire in order to evaporate alcohol. When the fire is put out, leave the snails in wine for stewing for additional 10 minutes. It will help the snail meat to absorb the aroma of onions, garlic and parsley.

Then take the separate frying pan to melt the remaining butter and put rosemary into it. In case mushrooms are too big, cut them in several pieces and fry in the olive oil, until they get golden color. Add salt and pepper.

Vegetables, prepared on grill can become the best garnish for this dish. Moreover, you are free to make the salad mix, decorate the top of it with shiitake mushrooms. Since the dish is universal, it can be served with white baguette and a glass of Louis Jado “Coto Bourguignon”.
